Lallemand expands meat cultures offering with acquisition of IFF portfolio

Lallemand, the parent company of IFE Manufacturing exhibitor Lallemand Bio-Ingredients, has acquired IFF’s meat cultures portfolio through its Lallemand Specialty Cultures business unit.

Lallemand is a privately owned company headquartered in Canada, specialising in the development and production of microorganisms, including yeasts, bacteria and fungi, and their derivatives. Its products serve industries ranging from baking, brewing and food production to human and animal nutrition. Lallemand Specialty Cultures focuses on selecting, developing and producing cultures for food applications.

IFF, or International Flavors & Fragrances, is a global supplier of flavours, fragrances, food ingredients and bioscience solutions. Its work in food production includes cultures, enzymes and other ingredients used by manufacturers across food and drink categories.

The acquisition adds Texel® starter and surface cultures, alongside bioprotective cultures, to Lallemand Specialty Cultures’ existing offering. The company said the expanded range would complement its technical expertise and help it address a wider variety of meat applications.

Lallemand Specialty Cultures brings 60 years of experience in meat cultures, with capabilities spanning production, application development and customer support.

The business said it would work closely with customers during the transition to maintain continuity of supply, technical support and service.

Lallemand Bio-Ingredients, a business unit of the Lallemand group, will exhibit at IFE Manufacturing, part of Food, Drink & Hospitality Week, taking place at Excel London on 5–7 April 2027.
