Bruce has been at the forefront of the London QSR market for over 30 years.
Currently working as a consultant to the sector he is a judge on Quality Food Awards, a regular commentator on Radio London on sector concerns and speaker at industry events.
He has advised clients on delivery and making dark kitchens work and has experience of operating brands from Editions kitchens. He has worked with kiosk operations and launched his own Soup business with manufacturing, wholesale and retail arms. This grew to include a fresh pasta business and pasta meal and salad wholesale arm.
As a father of gluten, dairy, nut and seed allergic children he has been a buyer of speciality dietary foods for the last 24 years.
