Dr. Shaobo Zhou is a Fellow of both the Institute of Food Science and Technology (IFST) and High Education Academy (UK). He is an Associate Professor in Nutrition and Health at the University of Greenwich, where he leads the BSc Human Nutrition and Health program. With extensive experience in food and nutrition education, and research, Dr. Zhou has devoted his career to exploring the intersection of food, nutrition, and health. His research interests span a range of critical topics, including nutraceutical foods, food innovation, and the nutritional aspects of chronic diseases such as diabetes, epilepsy, and cardiovascular conditions. He has contributed to research projects from grants supported by MRC, BBSRC, Wellcome Trust, Food Standard Agency, etc, and published over 90 research papers. His research received prestigious recognition from organisations like the Human Proteome Organisation and the Chinese government. Currently, he is sitting on the journal editor board member, e.g., the Food Chemistry Advances, Frontier Nutrition, and Molecules (MDPI) etc. He is also a regular reviewer for over 20 journals, including Food Chemistry, and the International Journal of Macromolecular Biology etc.
